The other day, when I posted a picture of my refrigerator, many of you asked me through the comments below that particular post how do I use zucchinis on a raw vegan diet.

Hehe… you know that situation when you’ve been doing something, like for example making a certain type of food, on daily basis for the last 10 years, so it seems like to you that everyone knows that?

Let me present to you how that zucchini related question sounds to me – as if I asked people on a standard diet how they use pasta. Because it’s true that zucchini is my pasta.

If you have been following me for a while, then you know that I have been eating a plant-based diet since 2005, and a raw vegan diet since 2012.

On a raw diet, I use zucchinis to make the textures of spaghetti, fettuccine, macaroni, rice, lasagna – you name it! The texture of food is very much important, because the texture of a food gives the food its specific taste!

So now, for example, in this very video (watch the video from the top of this page) I am making risotto – this is so easy – I use zucchinis to make rice, then I add spices and sauce, and then I add some tomato – celery stew – I slightly warm all this together in my 21st century oven, known as dehydrator.Β And then I top this mildly warm dish with some fresh sugar peas, lamb lettuce and even a mushroom on top.

Look how beautiful this dish looks like. A raw, vegan dish that is delicious and healthy.Β πŸπŸ‘ŒπŸ˜‹πŸ‘©β€πŸ³
