Ingredients for the crust:
- 150 g / 5.3 oz of fresh dates
- 150 g / 5.3 oz of dried apples
Ingredients for the filling:
- 100 g / 3.5 oz of dried apricots
- the pulp of one orange
Ingredients for the topping:
- 100 g of fresh dates
- 2 tablespoons carob powder
- ½ cups of orange juice
Equipment:
- knife and cutting board
- citrus press
- food processor
- baking paper
- rolling pin
- round cake tin
- blender
Preparation:
- Juice the orange.
- Separate the orange pulp from the peel.
Preparation of the base – baskets of dates and dried apples:
- Remove the pits from the dates.
- Place the dried apples in the food processor.
- Process the dried apples into flour.
- Add the dates to the food processor.
- Blend the dates and dried apple flour until you get a dough like mixture.
- Place the dough on one piece of baking paper.
- Cover the dough with another piece of baking paper.
- Roll out the dough with a rolling pin.
- Using a cookie cutter, cut out the round shapes from the dough.
- Shape the round shapes into baskets.
- Place the baskets in the freezer to tighten.
Filling preparation:
- Soak the dried apricots in water for about an hour, rinse them and leave them to dry from the excess water.
- Put the dried apricots and orange pulp in the blender.
- Blend these ingredients into a filling.
- Pour the filling into a bowl.
Filling baskets:
- Remove the baskets from the freezer.
- Fill the baskets with the orange filling.
- Put the Jaffa cakes this time in the fridge to tighten.
Topping preparation:
- Remove the pits from the dates.
- Put the dates, carob powder and orange juice in the blender.
- Blend these ingredients into the topping.
- Pour the topping into the cookie decorator.
- Take the cakes out of the fridge.
- Decorate the cakes with the topping.
