Fettuccine Alfredo – Raw Vegan Pasta

Fettuccine Alfredo is a famous Italian pasta recipe originating from Rome, where it was invented by chef Alfredo at the beginning of the 20th century. This dish consists of a type of pasta called 'fettucine' and a sauce called 'Alfredo'. In Italy, this dish is called 'Fettuccine al Burro' or 'Pasta al Burro' which mean 'fettuccine in butter' or 'pasta in butter'. Alfredo sauce is extremely creamy because it consists of fatty ingredients: butter and Parmiggiano-Reggiano cheese. This way, although tasty, this sauce is not healthy. Fortunately, we can make a replica of this sauce using fresh raw vegan ingredients and thus get a healthy version of Alfredo pasta.
